Reference is made to the plans and specifications submitted by you on
October 18, 1978 covering the proposed 7 -Eleven to be constructed in the
City of Fridley. Our review of these plans indicate the following
additional information and/or changes are necessary:
1. All food service equipment and hot water generating equipment
must comply with the appropriate standards of the National
Sanitation Foundation. Additional information (manufacturer's
name and model number) must be provided on all food service
equipment.
2. Hoses, electrical conduits, plumbing and drain lines underneath
equipment must be so installed as to be up off the floor to
facilitate housekeeping activities.
3. All open storage of clean dishes and utensils must be at least
18 inches off the floor or else enclosed storage provided.
4. At least 20 foot candles of light must be provided on all food
preparation and utensil cleansing surfaces, and at least 10
foot candles of light on all other surfaces. Also, all light
fixtures over food prepartation and utensil cleansing areas
must be of the shielded or enclosed type.
5. All equipment must be installed on approved legs or casters;
equipment, including cabinetry, must not be installed with
enclosed bases.
6. All annular openings around pipes and other conduits where they
pass through the walls and floors must be sealed (caulked).
7. All floor drains must be located at the front or exposed edge
of the equipment.

8. Conduit pipes for beverage lines must extend at least 3 to 4
inches above the finished floor elevation at both ends and the
annular opening between the beverage lines and the conduit pipe
sealed with a hard material and provided with a cleanable finish.
A tank rack of approved design must be provided for the syrup
tanks.
9. There is a conflict in the finish schedule for the floor finish
of the toilet rooms. Ceramic tile with a covered ceramic base
tile is an approved floor finish, not vinyl asbestos tile.
10. Our experience has shown that seamless flooring does not provide
a suitable floor finish. Consideration should be given to
providing a more durable floor covering in the walk-in cooler such
as quarry tile.
11. The walls in the workroom and sinkroom must be provided with a
light colored, washable finish. Epoxy or enamel paint should be
used for painted surfaces in these areas.
12. For effective sanitizing of food utensils, a unit heater must be
provided for the third compartment of the three -compartment sink.
13. Provide self-closing devices for the toilet room doors.
14. Information must be provided on the recessed floor drains. If
these are floor sinks they should be eliminated and a standard
or funnel -type floor drain should be provided. If it is a floor
drain it should be installed flush with the finished floor.
15. Information must be provided on anticipated date of the equipment
delivery, equipment installation, and completion of work.
The foregoing additional information and/or changes should be provided as
soon as possible so that our review of this project can be completed with-
out 'causing any needless delay to your construction or equipment installation
schedule.

mixer (V.C.M.), and hood and the stainless steel work table.
2. Hoses, electrical conduits, plumbing and drain lines underneath
equipment must be so installed as to be up off the floor to
facilitate housekeeping activities.
3. All open storage of clean dishes and utensils must be at least
18 inches off the floor or else enclosed storage provided.
4. At least 20 foot-candles of light must be provided on all food
preparation and utensil cleansing surfaces, and at least 10 foot-
candles of light on all other surfaces. Also, all light fixtures
over food preparation and utensil cleansing areas must be of the
shielded or enclosed type.
5. All equipment must be installed on approved legs or casters;

8. Where quarry tile is used coved quarry base tile must be provided.
9. Information must be provided on the construction of the piece of
equipment under the pass-thru.
10. A floor drain should be provided for the water heater pressure
release valve.
11. Information must be provided on the anticipated date of equipment
delivery, equipment installation, and completion of all work.
The foregoing additional information and/or changes should be provided as
soon as possible so that our review can be completed without causing any
needless delays to your construction or installation schedules.

proposed remodeling of Pizza Town at 7891 East River Road, in the City of Fridley.
Our review of these plans indicates the following additional information and/or changes are
necessary:
1. All food, beverage and hot water generating equipment must comply with the
appropriate standards of the National Sanitation Foundation.
a. The following are not known to comply with National Sanitation Foundation
Standards: Tyler upright freezer model AFS -24 -SA.
2. Hoses, electrical conduits, plumbing and drain lines underneath equipment must be so
installed as to be up off the floor to facilitate housekeeping activities.
3. All open storage of clean dishes and utensils must be at least 18 inches off the floor or
else enclosed storage provided.
4. At least 20 foot candles of light must be provided on all food preparation and utensil
cleansing surfaces, and at least 10 foot candles of light on all other surfaces. Also, all
light fixtures over food preparation and utensil cleansing areas must be of the shielded
or enclosed type.
5. All equipment must be installed on approved legs or casters; equipment, including
cabinetry, must not be installed with enclosed bases.
6. All annular openings around pipes and other conduits where they pass through the walls
and floors must be sealed (caulked).
7. Care must be taken that floor drains are located at the front or exposed edge of
equipment so as to facilitate housekeeping activities.
8. A tank rack of approved design must be provided for the soft drink tanks and the
carbon dioxide cylinders must be properly secured.

9. The wall -floor juncture must be coved using the same material as the floor finish.
10. The finish for the underside of the counter must have a smooth, easily cleanable, and
non-absorbent surface.
11. A produce preparation facility may need to be provided.
12. Information must be provided on how you will comply with the Minnesota Clean Indoor
Air Act (see enclosure).
13. Information must be provided on the anticipated date of equipment delivery,
equipment installation, and completion of all work.
The foregoing additional information and/or changes should be provided as soon as possible
so that our review of this project can be completed without causing needless delays to your
construction or equipment installation schedules. Commencement of food service activities,
including the receiving of food supplies, cannot occur until the facility has been inspected
and approved. The Health Department must be notified when the project is completed so
that a final inspection can be scheduled.
